논문초록 | Water-in-oil-in-water (W1/O/W2) emulsions can experience an osmotic imbalance due to differences in water content between the two phases causing the formation of spontaneous emulsification where the aqueous droplet can partition to the reverse micelles or remain in the microdroplet. This study aimed to analyze the kinetics of spontaneous emulsification induced by Polyglycerol polyricinoleate (PGPR) by using different middle phases to control mass transport. We also sought to understand the role of PGPR in stabilizing the W1/O interface and contributing to the O/W2 interface. Understanding the kinetics and cause of spontaneous emulsification can help interpret the shrinkage mechanism and control shrinkage speed, this method is expected to be a useful tool for diagnostic applications. |
